Ingredients
1 can chickpeas (15 oz), drained and rinsed
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon garlic powder
1/2 teaspoon salt
Instructions
1. Drain and rinse chickpeas thoroughly, then pat dry using paper towels or a clean cloth. Let them air dry for 10–15 minutes.
2. In a large bowl, toss the chickpeas with olive oil, lemon zest, lemon juice, thyme, rosemary, garlic powder, and salt until evenly coated.
3. Preheat the oven to 400°F (or air fryer to 375°F). Spread chickpeas in a single layer on a baking sheet or air fryer basket.
4. Roast for 25–30 minutes, shaking halfway through, until golden and crispy.
5. Let the chickpeas cool completely before storing in an airtight container at room temperature for up to 5 days.
Notes
Make sure the chickpeas are completely dry before roasting to maximize crunch.
If using fresh herbs instead of dried, add them during the last 5 minutes of roasting to prevent burning.
You can add chili flakes for a spicy variation or smoked paprika for depth.
