Description

This Loaded Potato Meatloaf recipe combines classic meatloaf with creamy mashed potatoes, cheddar cheese, crispy bacon, and chives. Perfect comfort food dinner idea that’s family-friendly and easy to make. Great for leftovers, meal prep, and cozy weeknight meals.


Ingredients

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1 large egg

1 tbsp Worcestershire sauce

1/2 tsp salt

1/2 tsp black pepper

2 cups mashed potatoes

1 cup shredded cheddar cheese

4 slices cooked bacon, crumbled

2 tbsp chopped chives or green onions


Instructions

1. Preheat the oven to 375°F.

2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.

3. Shape the mixture into a loaf and place in a greased baking dish.

4. Bake uncovered for 40 minutes.

5. Remove from oven and spread mashed potatoes evenly over the top.

6. Sprinkle with cheddar cheese and bacon crumbles.

7. Return to oven and bake for another 15–20 minutes until cheese is melted and bubbly.

8. Let rest for 5 minutes before slicing.

9. Garnish with chives or green onions and serve warm.

Notes

Use leftover mashed potatoes for convenience.

Don’t overmix the meat to avoid a dense loaf.

Let the meatloaf rest before slicing for cleaner cuts.
