Ingredients
6 bone-in, skin-on chicken thighs
1/3 cup pure maple syrup
1 1/2 tablespoons Dijon mustard
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
3 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, garlic, olive oil, salt, and pepper until smooth.
2. Preheat oven to 400°F. Pat chicken thighs dry and place skin-side up in a baking dish or cast iron skillet.
3. Pour half the glaze over the chicken and coat evenly using a spoon or brush.
4. Roast the chicken for 25 minutes, then remove from the oven and spoon remaining glaze over each piece.
5. Return to oven and roast for another 15–20 minutes, or until internal temperature reaches 175°F and skin is caramelized.
