Description

Ingredients

2 large sweet potatoes

2 tablespoons maple syrup

1 ½ tablespoons olive oil

½ teaspoon ground cinnamon

½ teaspoon salt

¼ teaspoon black pepper

1 teaspoon fresh thyme leaves (optional)


Instructions

1. Peel the sweet potatoes and cut them into 1-inch cubes for even roasting.

2. Place the cubes in a large bowl. Add maple syrup, olive oil, cinnamon, salt, and pepper. Toss to coat thoroughly.

3. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.

4. Roast in a preheated oven at 400°F (200°C) for 30–35 minutes, flipping halfway through.

5. Remove from oven once golden brown and crisp on the edges.

6. Sprinkle with fresh thyme, if desired, and serve warm.

Notes

This dish is naturally sweet and works well with a touch of heat, so try adding a pinch of cayenne.

Use parchment paper for easy cleanup and better caramelization.

To make ahead, roast and refrigerate, then reheat in a hot oven to crisp them back up.
