Description

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

0.5 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2.5 cups all-purpose flour

1 teaspoon baking soda

0.5 teaspoon salt

0.75 cup maraschino cherries, chopped and patted dry

1.5 cups semi-sweet chocolate chips


Instructions

1. Beat butter, brown sugar, and granulated sugar together until light and fluffy.

2. Add in egg and vanilla extract, mixing until well combined.

3. In a separate bowl, whisk together flour, baking soda, and salt.

4. Gradually add dry ingredients to the wet mixture until just combined.

5. Fold in chopped maraschino cherries and chocolate chips gently.

6. Scoop dough onto a parchment-lined baking sheet.

7. Bake at 350°F (175°C) for 10–12 minutes until edges are lightly golden.

8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

These cookies bake soft and set as they cool.

Use paper towels to blot cherries dry so the dough doesn’t get too wet.

Chilling the dough for 30 minutes helps control spreading.
