Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 pound chicken breast or thighs, boneless and skinless
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon red pepper flakes (optional)
1 cup sun-dried tomatoes, chopped
4 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups fresh spinach (optional)
Salt and black pepper to taste
Instructions
1. Heat olive oil and butter in a large pot over medium heat. Season chicken with salt, pepper, and Italian seasoning. Sear on both sides until golden brown. Remove and set aside.
2. In the same pot, add garlic and sun-dried tomatoes. Sauté until fragrant. Add red pepper flakes for heat.
3. Pour in chicken broth and scrape the bottom to deglaze the pan. Return chicken to the pot. Simmer for 20 minutes or until chicken is cooked through.
4. Remove chicken, shred with forks, and return to the pot. Stir in heavy cream and Parmesan cheese until fully melted.
5. Add spinach and let it wilt for a few minutes. Taste and adjust seasoning if needed.
6. Serve hot and enjoy the creamy, flavorful keto soup.
Notes
This soup thickens as it sits, so you may add more broth when reheating.
Using rotisserie chicken saves time and works just as well.
