Description

A rich and creamy Marry Me Chicken Soup made with tender chicken, sun-dried tomatoes, garlic, and parmesan in a savory broth. Perfect for cozy dinners, weeknight meals, or make-ahead lunches. This easy creamy chicken soup recipe is comforting, flavorful, and sure to impress.


Ingredients

2 tablespoons olive oil

1 pound chicken breast, diced

3 cloves garlic, minced

1 small onion, diced

4 cups chicken broth

1/2 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

1 cup heavy cream

1/2 cup grated parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh basil, chopped


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until soft, about 5 minutes. Stir in minced garlic and cook for another minute.

2. Add diced chicken breast to the pot. Season with salt, pepper, and Italian seasoning. Cook until golden on all sides.

3. Pour in chicken broth. Stir in chopped sun-dried tomatoes and red pepper flakes. Bring to a simmer and let cook for 15 minutes.

4. Reduce heat to low. Stir in heavy cream and grated parmesan cheese. Warm through without boiling. Adjust seasoning to taste.

5. Add fresh chopped basil just before serving. Ladle into bowls and garnish with extra parmesan or basil if desired.

Notes

Let the soup cool before storing to maintain texture.

You can substitute spinach for basil for a green twist.

For best freezing results, add cream after reheating.
