Ingredients
1 block feta cheese
1 cup cherry tomatoes
3 tablespoons extra virgin olive oil
3 garlic cloves, sliced
1 teaspoon fresh thyme or oregano
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon freshly cracked black pepper
1 teaspoon lemon zest
1 loaf crusty bread or pita, for serving
Instructions
1. Preheat oven to 400°F (200°C).
2. Place the block of feta in a small baking dish.
3. Add cherry tomatoes around the feta.
4. Scatter sliced garlic and sprinkle fresh thyme or oregano.
5. Drizzle olive oil over everything.
6. Season with red pepper flakes and cracked black pepper.
7. Bake for 25 minutes, until the feta is golden and tomatoes are blistered.
8. Remove from oven and add lemon zest.
9. Serve immediately with crusty bread or pita.
Notes
This appetizer is best served warm from the oven.
Use block feta packed in brine for best results.
You can repurpose leftovers as a pasta sauce or grain bowl topping.
