Ingredients
2 cups grated carrots
1 orange, peeled and chopped
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon honey
1 teaspoon ground cumin
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
Instructions
1. Wash and peel the carrots, then grate them finely using a box grater or food processor.
2. Peel the orange, remove seeds, and cut it into small bite-sized segments.
3. In a small bowl, whisk together lemon juice, olive oil, honey, cumin, and salt until emulsified.
4. In a large bowl, combine grated carrots, orange pieces, and chopped parsley.
5. Pour the dressing over the salad and toss until everything is evenly coated.
6. Chill the salad for 15–30 minutes before serving to allow the flavors to meld.
Notes
Letting the salad sit enhances the flavors and makes it even better.
Freshly grated carrots have better texture and sweetness than pre-shredded ones.
You can substitute parsley with fresh mint for a different herbaceous twist.
