Description

This Mexican Chopped Cheese Sandwich recipe combines juicy ground beef, melty cheddar cheese, and bold chipotle mayo for a spicy twist on the NYC classic. Easy to make, loaded with flavor, and perfect for weeknight dinners or game day cravings. Great with fries or elote on the side.


Ingredients

1/2 lb ground beef

1/2 medium white onion, diced

1 small jalapeño, diced

1 tbsp taco seasoning

3/4 cup shredded cheddar cheese

2 tbsp mayonnaise

1 chipotle pepper in adobo, minced

1 small tomato, sliced

1/2 cup shredded lettuce

2 hoagie rolls


Instructions

1. Heat oil in a skillet over medium heat and add diced onions and jalapeños. Sauté for 3–4 minutes until softened.

2. Add ground beef to the pan and break it up as it cooks. Brown the meat, then stir in taco seasoning.

3. Lower the heat and sprinkle shredded cheddar cheese over the beef. Let it melt without stirring, then gently mix to combine.

4. Slice and toast the hoagie rolls until golden and crisp.

5. Mix mayonnaise and minced chipotle pepper to make chipotle mayo. Spread it onto the toasted rolls.

6. Add the cheesy beef mixture to the rolls. Top with sliced tomatoes and shredded lettuce.

7. Serve immediately while warm.

Notes

Use freshly shredded cheese for best melt and flavor.

Adjust the jalapeño amount to control spice level.

Toasting the rolls helps prevent sogginess.
