Ingredients
6 large eggs
1 cup milk
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
6 teaspoons butter (for greasing muffin tin)
Instructions
1. Place a 12-cup muffin tin in the oven and preheat to 400°F.
2. In a blender, combine eggs, milk, flour, salt, and vanilla. Blend until smooth and let rest 5 minutes.
3. Carefully remove the muffin tin from the oven. Add 1/2 teaspoon butter to each cup to melt.
4. Pour batter into muffin cups, filling each halfway.
5. Bake for 15 to 18 minutes, or until puffed and golden.
6. Remove from oven and serve immediately with your favorite toppings.
Notes
Let the batter rest after blending for better puff.
Preheating the muffin tin helps the pancakes rise instantly.
Avoid opening the oven door too early to keep them from deflating.
