Description

This Morel Mushroom Pasta in Creamy Sauce recipe combines earthy morel mushrooms with a rich, silky cream sauce over tender pasta. An elegant, gourmet dish perfect for dinner parties or a cozy weeknight treat.


Ingredients

400g pasta

200g morel mushrooms (fresh or 30g dried)

3 tablespoons butter

2 shallots, finely chopped

2 cloves garlic, minced

1 cup heavy cream

½ cup grated parmesan cheese

2 tablespoons olive oil

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped


Instructions

1. Cook the pasta in salted boiling water until al dente, reserving a little pasta water, then drain.

2. If using dried morels, soak them in warm water for 20 minutes, drain, and gently squeeze.

3. In a skillet, heat butter and olive oil over medium heat, then sauté shallots until soft.

4. Add garlic and sauté briefly until fragrant.

5. Add the morels, season, and cook until tender.

6. Reduce heat, add cream, and simmer until thickened slightly.

7. Stir in parmesan cheese until melted and smooth.

8. Toss pasta in the sauce, adding reserved water if needed.

9. Plate and garnish with parsley, more parmesan, and cracked black pepper.

Notes

Use fresh or dried morels depending on availability.

Don’t overheat the cream to prevent curdling.

A splash of truffle oil at the end adds a luxurious touch.
