Ingredients
1 pound chicken breast
1 cup Greek yogurt
2 cloves garlic, minced
2 tablespoons lemon juice
2 tablespoons olive oil
1 cucumber, diced (reserve some shredded for tzatziki)
2 tomatoes, chopped
1 small red onion, thinly sliced
1/2 cup feta cheese, crumbled
2 tablespoons fresh dill or parsley, chopped
4 flatbreads or pitas
Salt and pepper to taste
1 teaspoon dried oregano (optional, for marinade)
Instructions
1. In a bowl, combine Greek yogurt, olive oil, garlic, lemon juice, salt, pepper, and oregano. Add sliced chicken breast and coat well. Cover and refrigerate for at least 30 minutes or overnight.
2. Heat a grill pan or skillet on medium. Cook the marinated chicken for 5–7 minutes per side until golden and fully cooked. Rest before slicing.
3. Prepare vegetables: dice cucumber and tomatoes, thinly slice red onion.
4. Make tzatziki by combining shredded cucumber, 1/2 cup Greek yogurt, garlic, lemon juice, salt, and dill.
5. Warm the flatbreads on a dry skillet or in the oven.
6. Assemble the wraps by spreading tzatziki, adding sliced chicken, vegetables, crumbled feta, and herbs. Roll and serve.
Notes
