Ingredients
4 cups bread flour
1 3/4 cups warm water
2 1/4 teaspoons active dry yeast
1 teaspoon sugar
2 teaspoons salt
3 tablespoons olive oil
1 1/2 cups crushed tomatoes or pizza sauce
2 cloves garlic, minced
1 teaspoon dried oregano
2 cups shredded low-moisture mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons fresh basil, torn
Instructions
1. In a large bowl, stir together the warm water, sugar, and active dry yeast. Let it sit for 5 to 10 minutes until foamy.
2. Add the bread flour, salt, and 1 tablespoon olive oil. Mix until a shaggy dough forms, then knead for 8 to 10 minutes until smooth and slightly tacky.
3. Place the dough in a lightly oiled bowl, cover, and let it rise for 1 to 1 1/2 hours, or until doubled in size.
4. Pour the remaining 2 tablespoons olive oil into a 9×13-inch baking pan and spread it around the bottom and corners.
5. Transfer the dough to the pan and gently press it outward with your fingertips. If it springs back, let it rest for 10 minutes and continue pressing until it fills the pan.
6. Cover the dough and let it rise again for 30 to 45 minutes until puffy.
7. While the dough rises, stir together the crushed tomatoes or pizza sauce, garlic, oregano, and a pinch of salt.
8. Preheat the oven to 450°F.
9. Sprinkle the mozzarella evenly over the dough, then spoon the sauce over the cheese in an even layer. Top with Parmesan.
10. Bake for 20 to 25 minutes until the top is bubbling, the edges are golden, and the bottom is crisp.
11. Let the pizza rest for 5 to 10 minutes, then finish with fresh basil, slice into squares, and serve warm.
