Ingredients
1 lb chicken breast or thighs, diced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 cup broccoli florets
1 cup carrots, julienned
1 small red onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/3 cup soy sauce or tamari
2 tablespoons honey or brown sugar
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon cornstarch
2 cups cooked wild rice
1 tablespoon toasted sesame seeds
2 green onions, sliced (for garnish)
Instructions
1. Heat sesame oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until golden and cooked through. Remove and set aside.
2. In the same pan, add more oil if needed. Add carrots, broccoli, and bell peppers. Stir-fry for 4 to 5 minutes until crisp-tender. Add red onion, garlic, and ginger. Cook for 1 minute until fragrant.
3. In a bowl, whisk soy sauce, honey, rice vinegar, garlic, ginger, and a splash of water. Stir in cornstarch to thicken.
4. Return chicken to pan. Pour in the sauce. Stir everything to coat and let simmer for 2–3 minutes until glossy and thickened.
5. Serve over warm wild rice. Top with sesame seeds and green onions.
