These no-bake lemon blueberry protein bites are the perfect healthy snack. Ingredients
1 cup rolled oats
1/2 cup vanilla protein powder
1/2 cup almond butter
1/4 cup honey or maple syrup
1 tablespoon lemon zest
1 tablespoon lemon juice
1/3 cup fresh blueberries
1 tablespoon chia seeds
1/8 teaspoon sea salt
Instructions
1. In a large mixing bowl, combine rolled oats, protein powder, chia seeds, and sea salt.
2. Add almond butter, honey or maple syrup, lemon juice, and lemon zest. Stir until well mixed and sticky.
3. Gently fold in fresh blueberries, being careful not to mash them.
4. Use your hands or a cookie scoop to roll into 1-inch balls.
5. If the mixture is too sticky, chill it for 10 minutes before rolling.
6. Place bites on a parchment-lined tray and refrigerate for 20 minutes.
7. Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
Notes
Make sure your almond butter is runny for easier mixing.
If using frozen blueberries, thaw and pat them dry first.
Chilling the mixture helps firm up the bites for easier rolling.
