Description

These No-Fuss BBQ Chicken & Veggie Foil Packs are the ultimate easy dinner idea, featuring juicy chicken, colorful vegetables, and smoky BBQ sauce. Perfect for summer grilling, camping, or simple weeknight meals with minimal cleanup.


Ingredients

1 lb boneless skinless chicken breasts

2 bell peppers sliced

1 red onion sliced

1 zucchini sliced

2 tbsp olive oil

1/2 cup BBQ sauce

1 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley chopped (optional)


Instructions

1. Preheat your grill to medium-high or oven to 400°F. Lay out four large sheets of heavy-duty foil.

2. Place one chicken breast in the center of each foil sheet. Arrange bell peppers, onion, and zucchini evenly around each chicken breast.

3. Drizzle olive oil over the chicken and vegetables. Season with salt and pepper. Spoon BBQ sauce generously over the chicken.

4. Fold and seal the foil sheets tightly into packets, ensuring no steam escapes.

5. Grill or bake for 20–25 minutes, flipping once halfway through, until chicken reaches an internal temperature of 165°F.

6. Carefully open the foil packs (watch for steam), garnish with chopped parsley if desired, and serve.

Notes

Make sure vegetables are cut into even pieces for even cooking.

Check doneness of chicken with a meat thermometer for safety.
