Ingredients
4 brioche or hamburger buns
1 pound ground beef (80/20)
2 large yellow onions, very thinly sliced
4 slices American cheese
1 tablespoon butter or oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Peel and thinly slice the onions as thin as possible, preferably with a mandoline. Toss with a pinch of salt and let rest for a few minutes.
2. Divide ground beef into four loose balls without overworking the meat.
3. Heat a cast iron skillet over medium-high heat with butter or oil.
4. Place each beef ball into the skillet and immediately top with a mound of onions.
5. Smash down with a spatula so onions press into the beef. Cook undisturbed for 2-3 minutes.
6. Flip carefully so the onions are now against the skillet. Cook for another 1-2 minutes.
7. Top with cheese and let it melt as the bottom crisps up.
8. Toast buns in another skillet or oven.
9. Assemble each burger and serve hot.
