Ingredients
4 chicken thighs
1 cup long-grain white rice
1 cup honey BBQ sauce
2 cups chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Season chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika.
2. In a large skillet, heat olive oil over medium heat. Sear chicken thighs for 3-4 minutes per side until golden. Remove and set aside.
3. Add rice to the same skillet and stir for about 1 minute to lightly toast.
4. Pour in chicken broth and half the honey BBQ sauce. Stir to combine.
5. Nestle chicken back into the skillet. Cover and simmer on low heat for 20-25 minutes, until rice is cooked and liquid absorbed.
6. Uncover, brush remaining honey BBQ sauce over the chicken, and let sit for 5 minutes to thicken.
7. Fluff rice and serve hot.
