Description
A quick and hearty One Pot Beef Taco Pasta recipe made with ground beef, taco seasoning, pasta, cheese, and tomato sauce. Perfect for busy weeknights, this cheesy taco pasta combines Tex-Mex flavor and creamy comfort in just one pot. Ideal for family dinners or leftovers.
Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound ground beef
1 packet taco seasoning (or 2 tablespoons homemade)
2 cups beef broth
1 can (15 oz) tomato sauce
2 cups rotini pasta (uncooked)
1 ½ cups shredded cheddar cheese
Instructions
1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and sauté until soft, about 3 minutes.
2. Add minced garlic and cook for 30 seconds until fragrant.
3. Stir in ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
4. Sprinkle in taco seasoning and stir to coat the beef evenly.
5. Add tomato sauce and beef broth. Stir everything together and bring to a gentle simmer.
6. Add the rotini pasta. Stir, making sure the pasta is submerged. Cover and cook for 12–14 minutes, stirring occasionally, until pasta is tender.
7. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
8. Serve warm with your favorite taco toppings.
Notes
This recipe is ideal for busy weeknights when you want a one-dish meal with minimal cleanup.
You can add extras like corn, black beans, or bell peppers to bulk it up.
Try using Mexican blend cheese or pepper jack for a spicier twist.
