Ingredients
300g linguine
2 chicken breasts
1 tablespoon olive oil
1 tablespoon Cajun seasoning
3 garlic cloves, minced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Slice chicken breasts into strips and coat with Cajun seasoning. Sear in olive oil over medium heat until cooked through. Remove and set aside.
2. In the same pot, melt butter. Add garlic and cook until fragrant. Stir in flour to make a roux and cook for 1-2 minutes.
3. Gradually whisk in chicken broth and then the heavy cream. Simmer until thickened. Season with salt and pepper.
4. Add uncooked linguine. Stir to coat, cover, and simmer until pasta is tender and sauce has thickened, about 10 minutes.
5. Stir in mozzarella, Parmesan, and cooked chicken. Mix until cheese is fully melted and creamy.
6. Garnish with chopped parsley and serve warm.
Notes
Use freshly shredded mozzarella for smoother melting.
Stir pasta occasionally to prevent sticking at the bottom of the pot.
For a lighter version, use half-and-half instead of heavy cream.
