Description

One Pot Marry Me Butter Beans is a creamy vegetarian dinner made with tender butter beans in a rich Parmesan and sun-dried tomato sauce. This easy one-pot recipe is perfect for busy weeknights or cozy weekends, packed with flavor and protein. Comfort food made simple and satisfying!


Ingredients

2 cans butter beans

2 tablespoons olive oil

3 garlic cloves, minced

1 shallot, finely chopped

½ cup sun-dried tomatoes, chopped

1 teaspoon fresh thyme leaves

1 cup vegetable broth

¾ cup heavy cream

½ cup grated Parmesan cheese

¼ teaspoon crushed red pepper flakes

Salt and pepper to taste


Instructions

1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped shallot and garlic, cooking for 2 to 3 minutes until softened and fragrant.

2. Add chopped sun-dried tomatoes and fresh thyme. Cook for another 2 minutes to infuse the oil with their flavor.

3. Pour in vegetable broth and heavy cream. Bring the mixture to a simmer and let it bubble gently for 3 to 5 minutes.

4. Stir in the drained butter beans. Simmer for another 5 to 7 minutes, letting the beans soak in the flavors and the sauce thicken.

5. Stir in grated Parmesan cheese until melted and smooth. Season with salt, pepper, and red pepper flakes. Simmer for an additional 1 to 2 minutes, then serve hot.

Notes

This dish can be made with canned or home-cooked butter beans.

Add fresh spinach or kale for extra greens.
