Ingredients

1 cup fresh orange juice

1 tablespoon orange zest

3/4 cup granulated sugar

3 large eggs

1/2 cup unsalted butter, cut into pieces

1 pinch salt (optional)


Instructions

1. In a medium saucepan off heat, whisk together orange juice, zest, sugar, and eggs until smooth.

2. Place the saucepan over medium-low heat. Cook while stirring constantly, avoiding any boiling.

3. After 8–10 minutes, the curd will thicken and coat the back of the spoon.

4. Remove from heat and stir in butter gradually until fully melted.

5. Strain the curd through a fine mesh sieve to remove zest or cooked egg bits.

6. Cool completely, then transfer to jars and refrigerate.

Notes

Orange curd thickens more as it chills, so don’t worry if it’s slightly runny while warm.

Use only fresh-squeezed orange juice, not concentrate, for best flavor.

For a twist, you can blend in a bit of blood orange juice or add a drop of vanilla.
