Ingredients
4 boneless skinless chicken thighs
1.5 pounds baby potatoes, halved
3 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons Cajun seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment or foil. Pat the chicken dry and halve the potatoes.
2. In a large bowl, mix olive oil, garlic, Cajun seasoning, paprika, salt, and pepper. Toss chicken and potatoes in the mixture until well coated.
3. Spread chicken and potatoes in a single layer on the baking sheet. Roast for 35 to 40 minutes, flipping potatoes halfway through.
4. Sprinkle Parmesan over the potatoes during the last 5 minutes of roasting, then return to oven until cheese is melted and golden.
5. Remove from oven, rest for 5 minutes, then garnish with chopped parsley and serve.
Notes
Use bone-in chicken thighs for crispier skin.
Adjust Cajun seasoning to taste if you prefer milder or spicier flavor.
