Description

This Oven-Roasted Cajun Chicken and Garlic Potatoes with Parmesan recipe is a bold, one-pan dinner loaded with spicy Cajun seasoning, crispy roasted garlic potatoes, and melted Parmesan cheese. Perfect for weeknight meals or meal prepping, this flavorful chicken dinner is easy, comforting, and incredibly satisfying.

Ingredients

4 boneless skinless chicken thighs

1.5 pounds baby potatoes, halved

3 tablespoons olive oil

4 garlic cloves, minced

2 tablespoons Cajun seasoning

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/3 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

Instructions

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment or foil. Pat the chicken dry and halve the potatoes.

2. In a large bowl, mix olive oil, garlic, Cajun seasoning, paprika, salt, and pepper. Toss chicken and potatoes in the mixture until well coated.

3. Spread chicken and potatoes in a single layer on the baking sheet. Roast for 35 to 40 minutes, flipping potatoes halfway through.

4. Sprinkle Parmesan over the potatoes during the last 5 minutes of roasting, then return to oven until cheese is melted and golden.

5. Remove from oven, rest for 5 minutes, then garnish with chopped parsley and serve.

Notes

Use bone-in chicken thighs for crispier skin.

Adjust Cajun seasoning to taste if you prefer milder or spicier flavor.

Reheat leftovers in an air fryer for best texture.
