These Peanut Butter Brownie Cups combine fudgy homemade brownies with creamy peanut butter centers in a rich, portable dessert. A crowd-pleasing chocolate and peanut butter recipe perfect for parties, holidays, or anytime cravings.
Ingredients
1/2 cup unsalted butter
1/2 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/2 cup creamy peanut butter
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.
2. In a saucepan over low heat, melt the butter and remove from heat. Stir in the granulated sugar and brown sugar until smooth. Let cool slightly.
3. Whisk in the eggs and vanilla extract until fully combined.
4. Fold in the cocoa powder, flour, and salt until just incorporated.
5. Scoop the brownie batter into the mini muffin tin, filling each cup about 3/4 full.
6. Warm the peanut butter slightly in the microwave, then drop about 1 teaspoon into the center of each brownie cup.
7. Bake for 12 to 15 minutes, until edges are set and centers are slightly soft.
8. Let cool in the tin for 10 minutes before transferring to a wire rack.
9. Serve warm or at room temperature.
Notes
The peanut butter will continue to set as the brownie cups cool, so avoid overbaking.
You can use natural peanut butter, but make sure it’s well-stirred and not too runny.
For extra indulgence, top with chocolate chips or a sprinkle of sea salt before baking.
