Ingredients

1/2 cup light brown sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

1/2 cup unsalted butter, softened

3/4 cup creamy peanut butter

2 1/2 cups powdered sugar

1 teaspoon vanilla extract

3 tablespoons heavy cream

2 tablespoons chopped peanuts or 12 mini peanut butter cups for topping


Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the butter, peanut butter, granulated sugar, and brown sugar until light and creamy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Add the dry ingredients in batches, alternating with the milk, and mix just until combined.

6. Divide the batter evenly between the cupcake liners, filling each about two-thirds full.

7. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.

8. Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

9. To make the frosting, beat the butter and peanut butter until smooth.

10. Add the powdered sugar and vanilla, then beat in the heavy cream until the frosting is fluffy and spreadable.

Notes

Use regular creamy peanut butter for the smoothest batter and frosting. Natural peanut butter can make the texture oily or uneven.
