Ingredients
1 lb ground beef
1 cup white rice (uncooked)
1 small onion, diced
2 cloves garlic, minced
2 1/4 cups beef broth
2 tablespoons tomato paste
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Heat a large skillet over medium heat and add olive oil. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
2. Add diced onion and minced garlic to the skillet. Cook until softened and fragrant, about 2 to 3 minutes.
3. Stir in tomato paste, paprika, salt, and black pepper. Mix well to coat everything evenly and cook for 1 minute.
4. Add uncooked rice and pour in beef broth. Stir to combine all ingredients. Bring to a simmer, then cover with a lid.
5. Reduce heat to low and simmer for 18 to 20 minutes, or until rice is tender and liquid is absorbed. Stir occasionally and add a splash of broth if needed.
6. Once done, fluff rice with a fork. Garnish with chopped parsley and serve warm.
Notes
Make sure to keep the skillet covered during the simmering process for fluffy rice.
Use leftover cooked rice to speed things up—just reduce broth by half and simmer less.
Add shredded cheese or a fried egg on top for an extra upgrade.
