Description

Ingredients

1 lb turkey breast

1 red bell pepper

1 yellow bell pepper

1 red onion

1 zucchini

3 tbsp olive oil

2 garlic cloves

2 tbsp lemon juice

1 tsp dried oregano

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper


Instructions

1. In a bowl, whisk olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper to create a marinade.

2. Cut turkey breast into 1.5-inch chunks and marinate for at least 30 minutes or up to 8 hours.

3. Chop bell peppers, red onion, and zucchini into similar-sized pieces.

4. Thread marinated turkey and vegetables onto skewers, alternating colors and textures.

5. Preheat grill to medium-high. Grill kabobs for 10–12 minutes, turning occasionally, until turkey is fully cooked.

6. Remove from grill and rest for 2 minutes before serving hot.

Notes

Use metal skewers or soak wooden skewers for 30 minutes to prevent burning.

Don’t overcrowd the skewers to ensure even cooking.
