Description

Ingredients

1.5 lbs chicken breast or thighs, cut into 1 to 1.5-inch cubes

2 cups fresh pineapple chunks

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 green bell pepper, chopped

1 red onion, cut into chunks

1/4 cup soy sauce

3 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons lime juice

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and pepper.

2. Add cubed chicken and stir to coat. Cover and refrigerate for 30 minutes to 2 hours.

3. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.

4. Thread chicken, pineapple, bell peppers, and onion alternately onto skewers.

5. Preheat grill to medium-high. Oil the grates lightly.

6. Grill kabobs for 10–12 minutes, turning every few minutes until chicken is cooked through and slightly charred.

7. Let rest for a few minutes before serving. Serve warm over rice or with your favorite sides.

Notes

You can use chicken thighs for juicier kabobs if preferred.

Fresh pineapple gives the best caramelized flavor on the grill.

Soak skewers thoroughly to avoid burning during grilling.
