Ingredients
6 tablespoons unsalted butter
1 3/4 cups pumpkin puree
10 ounces mini marshmallows
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
6 cups Rice Krispies cereal
1/4 teaspoon salt
Instructions
1. In a large saucepan over medium heat, melt the butter.
2. Add the pumpkin puree and stir, cooking for 2 to 3 minutes to reduce excess moisture.
3. Add mini marshmallows and stir until completely melted and smooth.
4. Stir in pumpkin pie spice, vanilla extract, and salt until well combined.
5. Remove from heat and quickly fold in Rice Krispies cereal. Stir until evenly coated.
6. Press the mixture into a greased 9×13-inch pan using a buttered spatula or parchment.
7. Let the treats cool fully at room temperature.
8. Cut into squares and serve.
Notes
Make sure to use pure pumpkin, not pumpkin pie filling.
Cook down pumpkin puree slightly to avoid soggy texture.
