Ingredients
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 ½ teaspoons pumpkin pie spice
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
¾ cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
4 oz cream cheese, softened
1 ½ cups powdered sugar
1 tablespoon milk
Instructions
1. Preheat your oven to 350°F and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
3. In a separate large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
4. Add pumpkin puree, egg, and vanilla extract to the creamed butter and mix until smooth.
5. Gradually mix the dry ingredients into the wet ingredients until just combined.
6. Scoop dough onto baking sheets using a cookie scoop, spacing about 2 inches apart.
7. Bake for 12–14 minutes, until edges are set and centers look puffed. Cool completely.
8. Beat cream cheese, powdered sugar, milk, and vanilla until smooth to make frosting.
9. Frost cooled cookies and optionally sprinkle with cinnamon or nutmeg.
