Ingredients
1 pound ground beef
2 tablespoons taco seasoning
2 cups cooked rice
2 cups shredded lettuce
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1 avocado, sliced
1/2 cup sour cream
2 green onions, sliced
Instructions
1. In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.
2. Add taco seasoning and 1/4 cup water. Simmer for 3–5 minutes to infuse flavor.
3. While the beef cooks, prepare the rice according to package instructions or reheat leftovers.
4. Chop the lettuce, halve cherry tomatoes, slice avocado, and chop green onions.
5. Assemble bowls starting with rice, then add beef.
6. Top with lettuce, tomatoes, cheese, avocado, sour cream, and green onions.
7. Serve immediately and enjoy!
Notes
Make sure to use hot rice so the cheese melts slightly on top.
Customize with your favorite toppings like jalapeños, hot sauce, or salsa.
For a lighter option, swap sour cream with Greek yogurt.
