Description

Ingredients

2 tablespoons butter

1 medium onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

2 cloves garlic, minced

4 cups chicken broth

1 can cream of chicken soup (10.5 ounces)

2 cups cooked shredded chicken (such as rotisserie)

1 teaspoon poultry seasoning

0.5 teaspoon salt

0.5 teaspoon black pepper

1 can refrigerated biscuit dough (8 biscuits)

0.75 cup milk

Fresh parsley for garnish (optional)


Instructions

1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.

2. Stir in garlic and cook for another 30 seconds until fragrant.

3. Pour in the chicken broth and add cream of chicken soup. Whisk until smooth and bring to a simmer.

4. Add shredded chicken, poultry seasoning, salt, and pepper. Let it simmer for 10 minutes.

5. Cut each biscuit into quarters. Gently drop dough pieces on top of the simmering mixture.

6. Cover the pot and reduce heat to low. Let dumplings steam for 15–20 minutes without lifting the lid.

7. Gently stir in milk and let heat through for 2–3 minutes.

8. Taste and adjust seasoning. Serve warm, topped with parsley if desired.

Notes

This recipe is perfect for using leftover or rotisserie chicken.

Don’t lift the lid while the dumplings cook — steam is key.

For extra richness, add a splash of heavy cream at the end.
