Description

This quick Mediterranean ground beef and veggie stir fry is a fast, healthy dinner packed with fresh vegetables, protein-rich ground beef, and bold Mediterranean flavors. Perfect for busy weeknights, it’s gluten-free, customizable, and ready in under 30 minutes. A wholesome and flavorful one-pan meal idea.


Ingredients

1 tablespoon olive oil

1 medium red onion, chopped

3 garlic cloves, minced

1 pound ground beef

1 bell pepper, sliced

1 zucchini, sliced

1 cup cherry tomatoes

2 cups fresh spinach

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon lemon juice

1/4 cup feta cheese, crumbled (optional)

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add chopped red onion and cook for 3 minutes until softened.

2. Add minced garlic and stir for 1 minute until fragrant.

3. Add ground beef and cook until browned, breaking it apart with a spoon, about 5 to 7 minutes. Drain excess fat if needed.

4. Stir in bell pepper and zucchini. Cook for 5 minutes until just tender.

5. Add cherry tomatoes and cook another 3 minutes until they blister and soften.

6. Sprinkle in cumin, smoked paprika, oregano, sea salt, and black pepper. Stir to combine.

7. Add spinach and cook for 1 minute until wilted. Remove from heat and drizzle with lemon juice.

8. Top with feta cheese and parsley if using. Serve hot over rice, couscous, or with warm pita bread.

Notes

This dish is great for meal prep and reheats beautifully.

For a spicier kick, add crushed red pepper flakes.

Swap ground beef for ground turkey or chicken for a leaner version.
