Ingredients
3 Persian cucumbers
3 tablespoons peanut butter

1 teaspoon red chili flakes
2 tablespoons fresh cilantro chopped
2 tablespoons toasted peanuts chopped
Instructions
1. Wash and dry the cucumbers, then slice them thinly using a mandoline or a sharp knife.
2. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, and red chili flakes until smooth and creamy.
3. Place the sliced cucumbers in a large bowl and pour the dressing over them. Toss gently to coat evenly.
4. Garnish with chopped fresh cilantro and toasted peanuts just before serving.
