Ingredients
1 lb chicken breast
2 tbsp butter
1 tbsp olive oil
1 medium yellow onion
3 cloves garlic
8 oz cremini mushrooms
2 tbsp flour
2 cups chicken broth
3/4 cup sour cream
1 tsp Dijon mustard
1 tbsp Worcestershire sauce
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
8 oz egg noodles
2 tbsp fresh parsley
Instructions
1. Season chicken with salt, pepper, and paprika. In a large skillet, heat butter and olive oil over medium-high heat. Sear chicken until golden brown on both sides, then remove and set aside.
2. In the same skillet, add more butter if needed and cook chopped onion until translucent. Add minced garlic and sliced mushrooms, cooking until soft and browned.
3. Sprinkle flour over the mixture and stir to coat. Slowly pour in chicken broth while stirring constantly. Add Dijon mustard and Worcestershire sauce and bring to a simmer.
4. Stir in sour cream and mix until the sauce becomes creamy and smooth. Return chicken to the pan and let simmer for 10 minutes.
5. Meanwhile, cook egg noodles according to package directions, then drain.
6. Toss noodles into the creamy chicken mixture or serve stroganoff over noodles. Garnish with fresh parsley and serve immediately.
Notes
Use chicken thighs if you prefer a juicier cut.
Make it gluten-free by using cornstarch instead of flour and GF noodles.
