Ingredients
340g rigatoni
450g steak tips (sirloin or ribeye)
1 tablespoon Cajun seasoning
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 cup Parmesan cheese, grated
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Toss steak tips with Cajun seasoning and a pinch of salt.
2. Heat olive oil in a skillet over high heat. Sear steak for 2–3 minutes per side until browned. Remove and set aside.
3. Boil rigatoni in salted water until al dente. Reserve 1 cup of pasta water and drain.
4. In the steak skillet, melt butter and sauté garlic for 1 minute until fragrant.
5. Stir in heavy cream and Parmesan. Simmer for 3–4 minutes until thickened. Use reserved pasta water to adjust consistency.
6. Add rigatoni to the sauce, tossing to coat evenly.
7. Return steak tips to the pan and stir gently to combine.
8. Serve hot with extra Parmesan and a dash of Cajun spice if desired.
Notes
Use freshly grated Parmesan for the best flavor and melt.
Let the steak rest after searing to keep it juicy when sliced.
Add a splash of cream or milk when reheating to revive the sauce.
