Description
Roasted Pears with Goat Cheese & Maple Walnut Drizzle is an easy elegant appetizer made with tender oven roasted pears, creamy goat cheese, crunchy walnuts, and pure maple syrup for the perfect sweet savory bite.
Ingredients
2 ripe but firm pears, halved and cored
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground cinnamon
1 teaspoon fresh thyme leaves
4 ounces goat cheese
1/2 cup walnuts, roughly chopped
3 tablespoons pure maple syrup
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Cut the pears in half lengthwise and scoop out the cores with a spoon or melon baller.
3. Arrange the pear halves cut side up on the baking sheet and brush them with olive oil.
4. Sprinkle the pears with salt, black pepper, cinnamon, and fresh thyme.
5. Roast for 20 to 25 minutes until the pears are tender but still holding their shape.
6. While the pears roast, toast the chopped walnuts in a small skillet over medium-low heat for 2 to 3 minutes until fragrant.
7. Stir the maple syrup into the walnuts and cook for 1 minute until glossy and lightly thickened.
8. Transfer the roasted pears to a serving plate and top each half with goat cheese while still warm.
9. Spoon the maple walnut drizzle over the pears and serve immediately.
Notes
Choose pears that are ripe enough to be flavorful but still firm to the touch near the stem.
Do not overbake the pears or they may become too soft to hold the topping well.
For extra flavor, finish with a few more fresh thyme leaves right before serving.
