This Rotisserie Chicken Pho recipe is a quick, comforting Vietnamese-inspired soup made with tender rotisserie chicken, aromatic broth, and fresh herbs. It’s an easy pho recipe perfect for weeknight dinners and meal prep.
Ingredients
2 cups shredded rotisserie chicken
8 cups chicken stock or broth
3 star anise
1 cinnamon stick
1 2-inch piece fresh ginger, sliced
1 onion, halved
2 tablespoons fish sauce
1 tablespoon brown sugar
12 ounces rice noodles (banh pho)
1 cup bean sprouts
1 lime, cut into wedges
1 jalapeño or Thai chili, sliced (optional)
2 green onions, thinly sliced
1 small white onion, thinly sliced
1 cup fresh herbs (cilantro, Thai basil, mint)
Instructions
1. In a large pot, combine chicken stock, star anise, cinnamon stick, sliced ginger, and halved onion. Simmer for 30 minutes to infuse the flavors.
2. Add fish sauce and brown sugar to the broth. Adjust seasoning to taste. Strain out solids from the broth.
3. Cook rice noodles according to package directions. Rinse with cold water and set aside.
4. Divide noodles among serving bowls and top with shredded rotisserie chicken.
5. Ladle hot broth over the chicken and noodles to warm them through.
6. Top each bowl with bean sprouts, green onions, white onion, herbs, and optional chili slices.
7. Serve with lime wedges and enjoy immediately.
Notes
This pho is highly customizable with your favorite herbs and toppings.
You can char the onion and ginger before adding for a deeper flavor.
Keep broth and noodles stored separately to preserve texture when reheating.
