Description

These Sailor Jacks Spice Muffins are moist, warmly spiced, and filled with the deep flavor of molasses and brown sugar. Perfect for cozy mornings or fall baking, these homemade muffins are a nostalgic twist on a classic snack cake. Ideal for breakfast, dessert, or snacking anytime.


Ingredients

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 cup dark brown sugar

1/2 cup unsulphured dark molasses

2 large eggs

3/4 cup buttermilk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract


Instructions

1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.

2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, cloves, and nutmeg.

3. In a large bowl, whisk together brown sugar, molasses, eggs, buttermilk, melted butter, and vanilla extract until smooth.

4. Add the dry ingredients into the wet ingredients and stir gently until just combined—do not overmix.

5. Divide the batter evenly into the muffin cups, filling each about 3/4 full.

6. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.

7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Use unsulphured dark molasses for the best flavor—avoid blackstrap molasses.

Don’t overmix the batter to keep the muffins tender.

These muffins taste even better the next day as the spices deepen.
