Ingredients

4 salmon fillets

1/3 cup brown sugar

3 tablespoons soy sauce

1 tablespoon Dijon mustard

2 garlic cloves, minced

1 tablespoon olive oil

1/4 teaspoon black pepper


Instructions

1. In a small bowl, combine brown sugar, soy sauce, Dijon mustard, garlic, and black pepper to make the glaze.

2. Pat the salmon fillets dry with paper towels for better searing.

3. Heat olive oil in a skillet over medium-high heat. Place the salmon skin-side down and cook for 3 to 4 minutes.

4. Flip the salmon and pour the glaze over the fillets. Cook another 3 to 4 minutes, letting the glaze bubble and thicken.

5. Once cooked through, remove from heat and spoon remaining glaze from the pan over the salmon before serving.

Notes

Patting the salmon dry is key for a good sear.

Don’t walk away while the glaze is cooking—it reduces fast.

For a spicier version, add a pinch of red pepper flakes to the glaze.
