Ingredients

1 lb large shrimp, peeled and deveined

0.5 cup cornstarch

1.5 tsp sea salt

1 tsp freshly cracked black pepper

3 cloves garlic, thinly sliced

2 scallions, chopped

1 red chili or Fresno pepper, thinly sliced (optional)

2 cups vegetable oil (for frying)


Instructions

1. Pat shrimp completely dry with paper towels to help the coating stick and improve crispiness.

2. In a bowl, toss shrimp with cornstarch, sea salt, and cracked black pepper until well coated.

3. Heat vegetable oil in a deep skillet or wok over medium-high heat until it reaches 350°F.

4. Fry the shrimp in batches, 1–2 minutes per side, until golden and crispy. Remove and drain on paper towels.

5. In a separate skillet, heat 1 tablespoon of oil and sauté garlic, chili (if using), and scallions for 30 seconds until fragrant.

6. Toss the crispy shrimp with the sautéed aromatics in the skillet until coated.

7. Serve immediately with lime wedges or sweet chili dipping sauce.

Notes

This recipe is best enjoyed fresh for maximum crispiness.

You can skip the chili if you prefer a mild flavor.
