Ingredients
1 tablespoon olive oil
1 pound sausage
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
2 tablespoons tomato paste
4 cups chicken broth
1 bay leaf
2 cans white beans, drained and rinsed
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up as it cooks.
2. Add onion, carrots, and celery. Sauté for 5 to 7 minutes until softened.
3. Stir in garlic and tomato paste, cooking for 1 minute.
4. Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce to a simmer for 10 minutes.
5. Add the drained white beans. Simmer for another 10 to 15 minutes until soup thickens slightly.
6. Season with salt and pepper to taste. Remove bay leaf before serving.
Notes
This soup tastes even better the next day.
Feel free to add kale or spinach during the last few minutes of simmering.
Use spicy sausage for extra heat and flavor.
