Description

These Sausage Breakfast Muffins are the perfect grab-and-go breakfast! Packed with eggs, cheddar cheese, and savory sausage, they’re freezer-friendly, high in protein, and ideal for meal prep. Make-ahead breakfast has never been easier or more delicious.


Ingredients

1 cup breakfast sausage, cooked and crumbled

4 large eggs

1 cup all-purpose flour

1 teaspoon baking powder

1/3 cup milk

1 cup shredded cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped green onions


Instructions

1. Preheat your oven to 375°F and grease a 12-cup muffin tin or line with paper liners.

2. In a skillet, cook the breakfast sausage over medium heat until browned. Drain and let cool.

3. In a large mixing bowl, whisk the eggs and milk until smooth.

4. Add flour, baking powder, salt, and black pepper. Stir until just combined.

5. Fold in the cooked sausage, shredded cheddar cheese, and green onions.

6. Divide the batter evenly among muffin cups, filling each about 3/4 full.

7. Bake for 20–25 minutes until golden and a toothpick comes out clean.

8. Let cool for 5 minutes in the pan, then transfer to a wire rack to finish cooling.

Notes

These muffins can be frozen for up to 2 months.

Use spicy sausage or switch cheeses for a twist.

Reheat in the microwave for 30 seconds for a quick breakfast.
