Ingredients
1 lb sausage
2 cups diced potatoes
1 cup chopped bell peppers

4 eggs

Instructions
1. Heat a large skillet over medium heat. Add sausage and break apart with a spatula. Cook until browned and fully cooked. Remove and set aside.
2. In the same skillet, add a bit of oil if needed. Sauté chopped onions and bell peppers until soft and caramelized, about 5-7 minutes.
3. Add diced potatoes to the skillet. Let them sit undisturbed to crisp, then stir and cook until tender and golden brown. Season with salt and pepper.
4. Return the cooked sausage to the pan and mix everything. Create small wells in the mixture and crack an egg into each. Cover with a lid and cook until the eggs are set to your liking.
