Ingredients

68 sea scallops

1 tablespoon olive oil

2 tablespoons butter

¾ cup heavy cream

1 tablespoon Cajun seasoning

2 cloves garlic, minced

1 tablespoon lemon juice

¼ teaspoon salt (or to taste)

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

1. Pat the scallops dry with paper towels to remove excess moisture and season them lightly with salt.

2. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter until hot.

3. Add scallops in a single layer and sear for 2–3 minutes per side without moving them until golden crust forms. Remove from pan and set aside.

4. Add the remaining tablespoon of butter to the same skillet and sauté garlic until fragrant.

5. Pour in the heavy cream and stir in Cajun seasoning. Let simmer for 3–4 minutes until slightly thickened.

6. Add lemon juice and return scallops to the pan, spooning sauce over them gently.

7. Let everything warm together for another minute.

8. Garnish with fresh parsley and serve immediately.

Notes

Patting the scallops completely dry is essential for that golden sear.

Do not overcrowd the pan—scallops need space to brown.

Use heavy cream for the best sauce texture; avoid milk or half-and-half.
