Ingredients
2 tablespoons olive oil
2 garlic cloves, minced
1 medium onion, chopped
1 red bell pepper, diced
1 can (14 oz) crushed tomatoes
1 teaspoon smoked paprika
1 teaspoon ground cumin
0.5 teaspoon salt
0.25 teaspoon black pepper
4 eggs
2 tablespoons fresh parsley, chopped
4 slices sourdough or country-style bread
Instructions
1. Heat olive oil in a skillet over medium heat and cook the chopped onion for 5 minutes until soft.
2. Add minced garlic and cook for 1 minute until fragrant.
3. Add the diced red bell pepper and cook until softened, about 5 minutes.
4. Stir in crushed tomatoes, smoked paprika, cumin, salt, and pepper. Simmer for 10 to 12 minutes until thickened.
5. Meanwhile, toast the bread slices until golden and crispy.
6. In a separate pan, fry the eggs sunny side up (or your preferred doneness), seasoning with salt and pepper.
7. Spoon the shakshouka sauce over the toasted bread slices.
8. Top each with a fried egg and garnish with fresh parsley.
9. Serve immediately while hot and enjoy.
Notes
Use thick, crusty bread to prevent sogginess.
The shakshouka sauce can be made in advance and stored for up to 4 days.
Feta cheese or avocado slices make great toppings for added richness.
