Description

A delightful Shiroi Koibito recipe featuring crisp langue de chat cookies sandwiched with silky white chocolate. Make this popular Japanese treat at home with simple ingredients. Perfect for gifting, holidays, or tea-time indulgence.


Ingredients

60 g unsalted butter

50 g powdered sugar

2 egg whites

60 g cake flour

1 tsp vanilla extract

100 g white chocolate


Instructions

1. Beat the softened butter and powdered sugar until light and fluffy.

2. Add the egg whites one at a time, mixing well after each addition.

3. Stir in the vanilla extract until combined.

4. Sift in the cake flour and fold gently into the mixture until smooth.

5. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.

6. Spoon small dollops of batter onto the sheet and spread into 2-inch squares or circles.

7. Bake for 12–15 minutes until edges are just golden. Let them cool completely.

8. Melt white chocolate using a double boiler or microwave until smooth, then let it slightly thicken.

9. Spread a thin layer of melted chocolate on one cookie and top with another to form a sandwich.

10. Let set at room temperature or refrigerate briefly before serving.

Notes

Use room-temperature butter for easy mixing and a smooth batter.

Cookies spread during baking, so leave enough space between each dollop.

Let the chocolate cool slightly before spreading to avoid it running off the cookie.
