Ingredients
1 lb shrimp, peeled and deveined
4 cloves garlic, minced
1 can (13.5 oz) full-fat coconut milk
1 tbsp olive oil
1 tbsp lime juice
1/2 tsp chili flakes
2 tbsp chopped fresh cilantro
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Pat the shrimp dry and season with salt and black pepper.
2. Heat olive oil in a skillet over medium heat. Add garlic and sauté for about 1 minute until fragrant.
3. Add the shrimp and cook for 1–2 minutes on each side until just pink. Remove shrimp and set aside.
4. Pour in the coconut milk, scraping up any bits. Simmer for 5 minutes until slightly thickened.
5. Return the shrimp to the pan, add lime juice and chili flakes, and simmer for 2 more minutes.
6. Garnish with chopped cilantro. Taste and adjust seasoning as needed.
Notes
Let the coconut milk simmer gently so it doesn’t separate.
Use full-fat canned coconut milk for the creamiest texture.
Don’t overcook the shrimp or they’ll turn rubbery.
