Ingredients
2 tablespoons olive oil
1 yellow onion, diced
3 carrots, chopped
3 celery stalks, chopped
3 garlic cloves, minced
1.5 pounds boneless chicken thighs
1 can (14 oz) crushed tomatoes
6 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1.5 cups ditalini pasta (or small pasta)
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5–7 minutes until softened.
2. Add garlic and cook for 1 minute until fragrant.
3. Add chicken thighs and crushed tomatoes. Stir to combine.
4. Pour in chicken broth. Add oregano, thyme, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer uncovered for 30–35 minutes until the chicken is tender.
6. Remove chicken, shred with forks, and return to the pot.
7. Add pasta and simmer until al dente, about 8–10 minutes.
8. Taste and adjust seasoning as needed. Serve warm.
Notes
This soup tastes even better the next day.
For extra richness, use bone-in chicken thighs.
If freezing, cook pasta separately to avoid it going mushy when reheated.
